Chocolate Berry Chia Pudding with Flaked Coconut

Makes 1 

Ingredients

40g chia seeds

100ml milk of choice

200g yoghurt, divided 

30g Happy Way Chocolate Whey Protein Powder

Berries of choice, to serve 

Flaked or shredded coconut, to serve 

Method

  1. In a blender, combine the chia seeds, milk, 100g of yoghurt and protein powder until smooth.

  2. Spoon half the chia mixture into a glass or jar, followed by half of the remaining yoghurt, and a layer of mixed berries. Repeat the layers and top with a sprinkle of coconut.

  3. Cover and refrigerate for 1 hour, or overnight it time allows, then enjoy.
