Pancake Tacos 

Makes 10 pancake tacos 

Ingredients 

1 packet of Happy Way’s Vanilla Buttermilk Protein Pancake Mix

320ml milk or water

Toppings

Greek yoghurt

Fresh berries (your choice of strawberries, blueberries, or mixed berries)

Peanut butter

Coconut flakes

Method

  1. In a large bowl, combine the entire packet of Happy Way Vanilla Buttermilk Protein Pancake Mix with milk or water then whisk until smooth. 

  2. Heat a non-stick pan over medium heat. Lightly grease with cooking spray or a small amount of oil. Pour small amounts of batter into the pan to form pancakes. Cook each side for 2-3 minutes or until golden brown. Repeat until all pancakes are cooked.

  3. To assemble, fold each pancake gently into a taco shape, then add your favourite toppings. We opted for Greek yoghurt, berries, peanut butter and coconut flakes.
