Sticky Date Porridge
Total time 10 minutes | Serves 1 | Vegan | Gluten Free Option
Ingredients
3/4 cup rolled oats (gluten free, if required)
1 1/2 cups milk of choice
1 tbsp tahini
2 large medjool dates, pitted and chopped
1 tsp chia seeds
1/4 tsp ground cinnamon
1/2 tsp maple syrup
Pinch of sea salt
1 tbsp coconut yoghurt
Method
Step 1: Place oats, milk, dates, chia seeds, cinnamon, maple syrup and salt into a saucepan and cook on medium heat for 5-10 minutes, stirring occasionally. Once the oats begin to thicken, stir in tahini and continue cooking for a further 2 minutes until it reaches your desired consistency. Remove from heat and serve with a dollop of coconut yoghurt, a drizzle of tahini and some crushed nuts/seeds.
Note: feel free to increase the portion of oats if you wish. Every body is different and we each need different amounts and types of food to keep us happy and fulled.
