5 Seed Mocha Protein Bars
Makes 8 slices
Ingredients
475g Medjool dates, pitted
125g cashew butter (or any preferred nut butter)
60g Happy Way Whey Mocha Protein Powder
60g oats
2 tbsp chia seeds
¼ cup pumpkin seeds
¼ cup flax seeds
¼ cup sesame seeds
¼ cup sunflower seeds
⅔ cup desiccated or shredded coconut
Pinch of sea salt
Method
Place all ingredients in a food processor and pulse until well combined. Line a loaf tin with baking paper and press the mixture firmly and evenly into the tin, using the back of a spoon or your hands to compact it.
Refrigerate for 30 minutes until set, then slice into bars. Store the bars in an airtight container in the fridge for up to 2 weeks, or freeze for longer storage.
