5 Seed Mocha Protein Bars

Makes 8 slices 

Ingredients 

475g Medjool dates, pitted

125g cashew butter (or any preferred nut butter) 

60g Happy Way Whey Mocha Protein Powder

60g oats

2 tbsp chia seeds

¼ cup pumpkin seeds

¼ cup flax seeds

¼ cup sesame seeds 

¼ cup sunflower seeds

⅔ cup desiccated or shredded coconut

Pinch of sea salt

Method

  1. Place all ingredients in a food processor and pulse until well combined. Line a loaf tin with baking paper and press the mixture firmly and evenly into the tin, using the back of a spoon or your hands to compact it.

  2. Refrigerate for 30 minutes until set, then slice into bars. Store the bars in an airtight container in the fridge for up to 2 weeks, or freeze for longer storage.
