Bakery Style Choc Chip Banana Muffins with Milk Chocolate Ganache Centre

Ingredients

Muffins

3 medium ripe bananas, mashed

1 egg

75g extra virgin olive oil

100g caster sugar

1 tsp vanilla extract

Pinch of salt

180g plain flour

1 tsp bicarb soda

170g milk chocolate chips

Chocolate Ganache Centre

120g milk chocolate, finely chopped

80ml pouring cream

Method

  1. Preheat the oven to 190°C and line a muffin tin with 9 cases. In a large bowl, combine the mashed bananas, egg, olive oil, caster sugar, vanilla extract, and a pinch of salt. Whisk to combine.

  2. Stir in the flour and bicarb soda until just combined, then gently fold in the chocolate chips.

  3. Divide the batter evenly between the muffin cases and bake for 20 minutes, or until a skewer inserted into the centre comes out clean.

  4. For the chocolate ganache centre, heat the cream in a small saucepan until it just starts to simmer. Remove from the heat, then stir in the milk chocolate until fully combined and smooth. Transfer the ganache to the fridge for about 10-15 mimnutes. Once the muffins have cooled, use a piping bag fitting with a small round nizzel to pope the ganache inside, thenseve!
