Chocolate Peanut Butter Pretzel Popsicles

Makes 6 

Ingredients

For the popsicles:

240g Greek yoghurt

35g Happy Way Choc Peanut Butter Protein Powder

65g peanut butter

125ml milk of choice

2 tbsp peanuts 

2 tbsp dark chocolate chips 

For the coating:

100g dark chocolate, melted

5g coconut oil (1 tsp)

40g crushed pretzels (⅓ cup)

40g chopped peanuts (⅓ cup)

Method

  1. In a blender, combine the yoghurt, protein powder, peanut butter and milk. Blend until smooth. Sprinkle a few chopped peanuts in the base of each popsicle mold, then pour the mixture evenly into the molds. Top with a sprinkle of dark chocolate chips. Freeze for at least 6 hours or overnight, until firm.

  2. Once the popsicles are frozen, prepare the coating. In a microwave-safe bowl, melt the dark chocolate and coconut oil in short bursts, stirring in between, until smooth. Let it cool for about 5-10 minutes.

  3. Carefully remove the frozen popsicles from the molds. Dip the tip of each popsicle into the chocolate, then into the crushed pretzels and peanuts.

  4. Enjoy immediately, or place the popsicles back in the freezer until you’re ready to serve.

Note: Once fully frozen, transfer the popsicles to an airtight container or resealable bag to help maintain the crispiness of the coating. They can be stored in the freezer for up to 2 weeks.
