Panettone French Toast with Berry Compote

Ingredients
200g frozen berries of choice
Juice and zest of ½ lemon
1 tbsp caster sugar
2 eggs
90ml milk of choice
1/8 tsp ground cinnamon
1 tsp vanilla extract
Pinch of salt
4 slices panettone, about 3-4cm thick
Butter, for frying
Thickened cream, to serve
Icing sugar, to serve
Method
In a saucepan, combine the berries, lemon juice, zest and sugar over medium heat. Stir occasionally until berries release their juices (5-7 minutes). Reduce heat to low and simmer for 5-10 minutes until slightly thickened. Set aside to cool and thicken.
In a shallow bowl, whisk together eggs, milk, cinnamon, vanilla and salt. Dip panettone slices in the mixture, coating both sides.
Melt a pat of butter in a non-stick pan over medium-high heat. Add the soaked panettone slices and cook for 2-3 minutes on each side, until golden brown.
To serve, arrange two slices of French toast on each plate. Top with a generous spoonful of berry compote and a dollop of thickened cream, then dust with icing sugar.
