Frozen Strawberry Matcha

Serves 2

Ingredients
For the matcha mixture:

650ml milk

150ml sweetened condensed milk

3 tsp matcha powder

3 tbsp warm water

For the berry compote:

200g frozen berries (your choice)

Juice and zest of ½ lemon

2 tsp caster sugar

Method

  1. Place the matcha powder in a small bowl and dissolve it with the warm water, whisking vigorously until smooth. In a large jug, combine the milk, condensed milk, and prepared matcha, stirring until fully incorporated. Pour the mixture into KitchenAid ice molds and freeze overnight or until completely solid.

  2. In a small saucepan, combine the berries, lemon juice, zest, and sugar over medium heat. Stir occasionally until the berries release their juices (5–7 minutes). Reduce the heat to low and simmer for 5–10 minutes until slightly thickened. Remove from heat and let cool.

  3. Attach the KitchenAid Ice Shaver to your stand mixer. Remove a frozen block from its mold, place it in the shaver attachment, and secure it. Set the mixer to speed 5–6 and shave the ice into a bowl. Repeat for additional servings. To assemble, spoon the berry compote into glasses, then top with the frozen matcha. Serve immediately and enjoy!
