Strawberry White Chocolate Cookie Skillet

Ingredients

170g unsalted butter, melted

100g light brown sugar

100g caster sugar

1 egg + 1 egg yolk

1 tsp vanilla extract

250g flour

3/4 tsp bicarb soda

Pinch of salt

220g white chocolate chips

100g frozen raspberries

Vanilla ice cream, to serve (optional)

Method

  1. Preheat the oven to 175°C.

  2. In a large bowl, whisk together the melted butter, brown sugar and caster sugar until smooth. Add the egg, egg yolk and vanilla extract and whisk until well combined.

  3. Add the flour, bicarb soda and salt, then stir until just incorporated. Gently fold in the chocolate chips and strawberries, ensuring they’re evenly distributed throughout the dough.

  4. Transfer the mixture to a skillet and bake for 30-35 minutes, or until the edges are golden and crisp, and the centre is slightly soft. Remove from the oven and let it cool for 10 minutes before serving with vanilla ice cream.
