The Ultimate Vegan Pancakes
Total time 25 minutes | Makes 8-10 pancakes, depending on size | Vegan | Nut Free Option
Ingredients
125g banana, mashed (approximately 1 medium banana)
240ml milk of choice
1.5 tbsp maple syrup
1 tbsp olive oil
2 tsp baking powder
1/2 tsp ground cinnamon
1 pinch salt
120g plain flour
70g oat flour (simply blend oats in a high speed blender until a fine powder forms)
30g almond meal (or substitute for more plain flour)
Method
Step 1: In a large bowl, combine plain flour, oat flour, almond meal, baking powder, cinnamon and salt. In a separate bowl, whisk together mashed banana, milk, maple syrup and olive oil. Gently fold wet ingredients into dry until a batter forms.
Step 2: Place a large fry pan over medium heat and drizzle with a little olive oil. Spoon approximately 1/4 - 1/2 cup of batter into the pan; cook for 2-4 minutes on one side, or until bubbles start appearing on the surface, then flip and cook on other side for approximately 3 minutes.
Step 3: Serve with your choice of toppings. Some of my favourites are banana, berries, chocolate spread, nut butter or yoghurt!
