Burrata, Mortadella and Pistachio Focaccia 

Serves 2

Ingredients

2 portions of focaccia bread (or you can make from scratch using my recipe - link in bio!)

2-3 tbsp pesto

150g thinly sliced mortadella

2 tbsp crushed pistachios

2 small handfuls of rocket 

Extra virgin olive oil, to drizzle 2 tbsp olive oil

Pinch of salt, to taste

1 ball of burrata

Method

  1. Slice both focaccia rolls in half horizontally to create a top and bottom layer.

  2. Spread the pesto on both sides. On the bottom half of the focaccia, lay out the mortadella, then sprinkle half of the crushed pistachios on top. 

  3. Add a handful of fresh rocket on top of the mortadella and pistachios and drizzle with a little olive oil and season with a pinch of salt. 

  4. Gently tear the burrata into pieces and place it on top of the rocket.

  5. Sprinkle the remaining crushed pistachios over the burrata. Place the top half of the focaccia back on, gently pressing it down, then serve.
