Roasted Peaches with Thyme and Chilli Honey

Serves 4

Ingredients

6 ripe peaches

2 tbsp Bippi’s Italian Chilli Honey

2 tbsp caster sugar

4 sprigs of fresh thyme, plus more to serve 

2 whole star anise 

2 tbsp rum 

¾ cup (85g) walnuts, lightly toasted and roughly chopped

Vanilla ice cream, to serve 

Method 

  1. Preheat your oven to 180°C. Line a baking dish with parchment paper.

  2. Halve the peaches and remove the pits. Slice some of the halves into quarters for variation. Arrange the peaches in the roasting dish, cut side up. Drizzle with Bippi’s Italian Chilli Honey, then sprinkle the sugar evenly over the peaches and scatter with thyme and star anise. Finally, pour the rum on top. 

  3. Roast for 20–25 minutes, flipping the peaches halfway through, until they become soft, golden, and lightly caramelised.

  4. Serve the peaches with a scoop of vanilla ice cream, a sprinkle of walnuts, and the remaining pan juices. Finish with a drizzle of chilli honey and a garnish of fresh thyme leaves.
