Leftover Christmas Ham Frittata

Serves 6 

Ingredients

1 tbsp extra virgin olive oil

200g mushrooms, finely sliced

100g frozen peas

Salt and pepper, to taste

8 medium eggs

200g ham, diced

1 packet of chives, finely chopped

80g cheddar, grated

Method

  1. Preheat the oven to 180°C. Heat the olive oil in a large frying pan. Add the mushrooms and cook until softened, then stir in the frozen peas and cook for another 5 minutes. Season with salt and pepper as needed.

  2. In a large mixing bowl, beat the eggs. Stir in the cooked mushroom and pea mixture, along with the ham, chives and 50g of grated cheddar. Season to taste with salt and pepper.

  3. Using the same pan you cooked the mushrooms and peas in, pour in the frittata mixture and sprinkle the remaining 30g of cheddar over the top. Bake for 25-30 minutes, or until set and golden on top, then slice and serve.

Notes

  • Feel free to swap the chives for another herb, or the cheddar for a different cheese - mozzarella would be lovely.

  • If you don’t have 8 eggs, use 6 and add 200ml of milk.
