Lemon Roasted Potatoes

Serves 6 (side)

Ingredients

1kg potatoes 

½ cup chicken stock 

½ cup extra virgin olive oil 

⅓ lemon juice 

3 garlic cloves 

1 tsp dried oregano 

½ tsp salt 

Method 

Step 1: Preheat oven to 180°C fan forced.  Cut potatoes into thick wedges and transfer to a baking dish with remaining ingredients. Roast for 45-55 minutes, or until most of the liquid has evaporated. Transfer to a platter, then serve.
