Mango and Brown Rice Salad

Serves 4

Ingredients

1 cup brown rice

2 handfuls baby spinach

1 mango, sliced

3 radishes, thinly sliced

1 bunch coriander, roughly chopped

1 bunch mint, finely chopped

4 spring onions, finely sliced

50g feta, crumbled

Juice of 1 lime

Olive oil, to drizzle

Salt, to taste

Method

  1. Cook the brown rice according to the packet instructions. Once cooked, rinse under cold water to cool down and drain.

  2. In a large bowl, combine the cooked rice with the baby spinach, mango, radishes, coriander, mint, spring onions and crumbled feta.

  3. Drizzle with lime juice and olive oil. Season with salt and toss to combine, then serve.
