Raspberry Lamington Trifle

Ingredients

4 x 85g packets of raspberry jelly crystals

2 x packets of Woolworths Festive Lamington 8-pack

250g fresh raspberries

500ml Woolworths Vanilla Custard

400ml thickened cream

3 tbsp raspberry jam

¼ cup shaved coconut

1 x packet of Woolworths Baileys Flavoured Meringue Kisses

40g dark chocolate, shaved

Method

  1. Prepare the jelly according to the packet instructions. Pour half into a trifle dish and the rest into a shallow container. Refrigerate both until set (around 4 hours, or overnight). 

  2. Whip the thickened cream until soft peaks form, then set aside.

  3. To assemble, slice the lamingtons in half and layer them in the trifle dish. Top with jelly from the shallow container, followed by half of the fresh raspberries, then a generous layer of vanilla custard.

  4. Add another layer of halved lamingtons, then top with whipped cream. Drizzle with raspberry jam and garnish with shaved coconut, meringue kisses, remaining raspberries, and shaved dark chocolate.
