Gluten Free Choc-Chip Cookies

I’ve definitely tried and tested my fair share of vegan + gluten free choc-chip cookie recipes over the years, and I’ve finally found a keeper! I’ve received lots of great feedback on this recipe and would love to share how simple and easy it is. This is the ideal recipe when you’re short on time and quickly need to whip up something delicious!

Total time 25 minutes | Makes 12-14 | Vegan, Gluten Free, Nut Free

Ingredients

Dry

  • 1 1/3 cups gluten free flour (or sub for oat/wholemeal spelt/wholemeal flour)

  • ¼ tsp baking powder

  • ½ tsp bi-carb soda

  • ¼ tsp salt

Wet

  • ¼ cup coconut oil, melted

  • 2/3 cup coconut sugar

  • flax egg (4 tsp ground flax meal + 4 tbsp. water, whisked and left to set for 5-10 minutes)

Other:

  • approximately ½ cup vegan dark chocolate chips (or a finely chopped bar of chocolate)

Method

  1. Preheat oven to 180°C and line a baking tray with baking paper.

  2. Combine all dry ingredients in a medium bowl and set aside.

  3. In a separate bowl, whisk together the melted coconut oil and coconut sugar. Once combined, add the flax egg to the wet ingredients and whisk to combine.

  4. Gradually add the dry ingredients to the wet. The dough will be quite dry, so I’d recommend using your hands to combine everything (add more oil only if you are struggling to combine everything). Add the chocolate chips and combine.

  5. Spoon and roll the mixture into small balls and flatten slightly on the baking tray (approximately 1-1.5 tbsp. for each cookie)

  6. Bake for approximately 8-11 minutes.

  7. Let the cookies cool and slightly harden for around 10 minutes.
