Coconut Chia Pudding with Berry Compote

We’re constantly looking at ways to try and improve our health, whether it be through purchasing the latest ‘superfood’ or trailing a new A-lister exercise regime. But we often forget the basics of what actually makes our bodies thrive, and funnily enough, it can be as simple as eating breakfast. Despite everyone’s body being unique and different, most of us feel out best by consuming a nourishing, balanced meal to kick-start the day. After a lengthy period of fasting (while we sleep), our body’s energy and glucose stores begin to drop. So, in order to re-fuel and get the most out of the day, we need to break the fast! Luckily enough, I’ve got some exciting breakfast recipes on my website if you’re lacking inspiration…or if a Chia Pudding is more up your alley, then keep reading!

Chia seeds are a great addition to your next breakfast…they’re loaded with a range of nutrients that have important benefits for both your brain and body. Total time 5 minutes + overnight setting | Serves 1 | Vegan | Gluten Free | Nut Free

Ingredients

Chia Pudding Base

  • 120mls coconut milk (I used Coco Quench)

  • 2 tbsp chia seeds

  • ¼ tsp pure vanilla extract

Berry Compote

  • ¼ cup frozen blueberries

  • ¼ cup frozen raspberries

  • 1 tbsp maple syrup

  • ¼ tsp vanilla extract

  • ¼ tsp ground cardamom

  • ¼ tsp ground cinnamon

Method

Step 1: Place all chia pudding ingredients into a glass/bowl and whisk to combine. Cover and refrigerate overnight (or at least 5 hours). This will allow the chia seeds to absorb the milk and become thick and creamy.

Step 2: For the compote, place all ingredients in a small saucepan and bring to medium heat. Once small bubbles appear, reduce heat and gently mash berries with a wooden spoon. Continue cooking over low heat for 10 minutes, then let cool, place in a container and store in fridge until the chia pudding base is set.

Step 3: When you’re ready to eat, spoon the berry compote over the chia pudding and add your toppings. My favourite is the Goodies and Grains Cacao Kapow granola, fresh fruit and almond butter.

Note: store in refrigerator for 3-4 days max.
