Pasta alla Checca

One of my all-time favourite pasta dishes is Pasta alla Checca. Our nonna would whip this up as soon as the weather started to warm, and I can’t think of a better time to share it than the first day of spring!

It’s incredibly simple, using just ripe tomatoes, creamy bocconcini, fresh basil, pasta, and a generous drizzle of olive oil. Perfect for a light, flavourful meal that celebrates the season!
