Pasta alla Checca

Serves 4 | Under 15 minutes

Ingredients

300g farfalle (or any short pasta)

500g cherry tomatoes, halved

2 garlic cloves, finely chopped

1 bunch fresh basil, leaves torn

250g mini bocconcini (or regular, quartered)

Extra virgin olive oil

Sea salt flakes

Method

  1. Bring a large pot of salted water to the boil. Cook pasta according to packet instructions. Drain nd transfer to a large serving bowl.

  2. Add the halved cherry tomatoes, chopped garlic, torn basil leaves, and bocconcini to the warm pasta. Drizzle generously with extra virgin olive oil and season with sea salt flakes.

  3. Gently toss everything together until well combined, then serve.
