Choc Peanut Butter Cookie Skillet

Serves 8-10

Ingredients

  • 280g almond or peanut butter

  • 160g caster sugar

  • 110g maple syrup

  • 1 tsp vanilla extract

  • 1 egg

  • 2 tbsp milk of choice

  • 300g flour

  • 35g cacao powder

  • 1/4 tsp bicarbonate powder

  • 1/4 tsp baking powder

  • Pinch of salt

  • 200g dark chocolate chips

  • 50g white chocolate chips 


Method
Step 1: Preheat oven to 160°C and grease a 20cm circle skillet or baking dish. In a large bowl, whisk together almond or peanut butter, sugar, maple syrup, vanilla, egg and milk.

Step 2: To the same bowl, add the flour, cacao powder, bicarbonate powder, baking powder and salt. Gently fold to combine and sprinkle in the 150g of dark chocolate chips. You will need to use your hands to ensure everything is well-combined, as the dough is quite stiff.

Step 3: Transfer the dough to your skillet or baking dish and press down. Scatter with remaining dark chocolate chips and white chocolate chips. Bake for 15 minutes, or until firm to touch.
