Vegetarian Mediterranean Bowl

Ingredients
1 cup cooked brown rice and quinoa mix (or your preferred grain)
1/2 cup cherry tomatoes, halved
1/2 cucumber, sliced into half-moons
1/8 red onion, thinly sliced
1/4 cup roasted capsicum (from a jar)
2 tbsp kalamata olives
2 tbsp hummus
Feta cheese, crumbled
Fresh parsley, for garnish
Lemon wedge
Drizzle of olive oil
Salt, to taste
Pepper, to taste
Method:
In a large bowl, combine the cooked brown rice and quinoa mix as your base. Add the cherry tomatoes, cucumber, red onion, kalamata olives and capsicum. Top with hummus, crumbled feta and parsley. Then drizzle with olive oil and a squeeze of lemon juice. Season with salt and pepper to taste.
