Chocolate Peanut Butter Bites

These bliss balls are a staple in our household and are the perfect on-the-go snack. I often make a big batch on Sunday nights which makes meal prep a lot easier throughout the week! I’ve tried to cram in as many nourishing ingredients, while still maximising the flavour (hence the delicious chocolatey flavour from the cacao!)


Total time 10 mins | Makes 15 balls | Vegan, Gluten Free Option

Ingredients

  • 295g (approx. 20) medjool dates, pitted

  • 120g almonds

  • 2 tbsp maple syrup

  • 2-3 tbsp cacao powder

  • 2 tbsp peanut butter

  • 1 tbsp chia seeds

  • 1 tbsp flax meal

  • 2 tbsp desiccated or shredded coconut

  • 1/2 tsp vanilla essence

  • pinch of sea salt

Additional extras:

  • ½ cup desiccated or shredded coconut for decorating

Method

Place all ingredients into a blender/food processor and process until everything is broken down and combined (it should stick together nicely if you compress with your fingers)

  1. Take a tablespoon of the mixture and roll into a ball

  2. Optional: Roll the balls in coconut to jazz them up!

  3. Pop into the fridge to chill and firm up, or enjoy straight away.

Notes:

  • These balls will keep in an airtight container in the fridge for 2 weeks, or in the freezer for 2-3 months.
