Tuna Sashimi with Coconut and Thai Basil Oil
For me, spring is all about long lunches and great food. And what better way to welcome the season than with a beautiful lunch spread, starting with my Tuna Sashimi with Coconut and Thai Basil Oil
Pasta alla Checca
One of my all-time favourite pasta dishes is Pasta alla Checca. Our nonna would whip this up as soon as the weather started to warm, and I can’t think of a better time to share it than the first day of spring!
It’s incredibly simple, using just ripe tomatoes, creamy bocconcini, fresh basil, pasta, and a generous drizzle of olive oil. Perfect for a light, flavourful meal that celebrates the season!
Nduja and Burrata Risotto
If you're looking for a dish that's sure to impress without spending hours in the kitchen, my rich and creamy nduja and burrata risotto is the answer. It’s the perfect main for an intimate dinner party or a cozy date night for two. There’s nothing quite like breaking into that burrata and watching the deliciously creamy stracciatella ooze out—pure indulgence!
10 Minute Chicken Teriyaki Bowls
When you're short on time but still want something delicious, these Teriyaki Chicken Rice Bowls are perfect! They come together in just 10 minutes, making them a quick and satisfying meal. Simply pan-fry the chicken with a homemade teriyaki sauce, serve it over rice, and top with spring onions. You can add any veggies you have on hand—like I did with some broccoli, which I boiled and then pan-fried in the leftover teriyaki sauce. For even more convenience, microwavable rice works great too. A super easy meal for when you're in a rush!
One Pot Roast Chicken
Stuck on what to cook for dinner tonight? Look no further—my one-pot roast chicken has you covered! I could practically make this blindfolded since it's a weekly go-to in my kitchen. It’s super easy but still tastes like you’ve put hours of love into it. Just brown the chicken in a large pot, toss it in the oven with your favorite veggies and herbs, and let it cook for about 50 minutes. That’s it!
And the best part? If you’ve got leftovers, tomorrow’s chicken, lettuce, and mayo sandwich is ready to go!

If you love hearty dishes that require minimal effort, my take on Black Lentil Dahl, also known as Dahl Makhani, is the perfect recipe for you! Made with pantry staples like spices, tinned tomatoes, and, of course, lentils, this recipe needs to go straight into your winter recipe rotation. Plus, you can ad any veggies you like or enjoy it as is.
