Brown Rice and Salmon Power Salad

Serves 1

Ingredients

1 cup cooked brown rice (I used the microwave pouches so I don’t need to do any dishes!)

2 spring onions (green parts), finely sliced

2 tbsp pistachios, roughly chopped

Small handful of fresh mint, finely chopped

Small handful of fresh coriander, finely chopped

Sprinkle of crumbled feta

1 smoked salmon fillet, flaked (I liked the hot smoked salmon fillets)

1 Lebanese cucumber, diced

Small handful of raisins or sultanas

Pinch of chilli flakes

Pinch of sumac

Salt & pepper, to taste

Drizzle of olive oil

Method

  1. In a large bowl, toss together the cooked rice, spring onions, pistachios, mint, coriander, feta, salmon, cucumber and raisins (or sultanas) until well combined.

  2. Sprinkle with chilli flakes, sumac, and season with salt and pepper. Finish with a drizzle of olive oil, toss again, and serve.
