5 Minute Black Bean and Corn Salad 

Serves 1

1 cup of cooked brown rice (I used the microwave pouches so I don’t need to do any dishes!)

1/2 tin of black beans, drained and rinsed 

70g tinned sweet corn (I used the Edgell snack tins, but you can also just use plain tinned corn) 

1 small handful coriander, roughly chopped 

1/2 avocado, diced  

Sprinkle of crumbled feta

Juice of 1/2 lime 

Drizzle of olive oil

Pinch of chilli flakes or 1/4 tsp cayenne pepper 

Salt & pepper, to taste

Method

  1. Combine all ingredients in a mixing bowl and stir to combine, then serve!
