Apricot and Coconut Muesli Bites
Ingredients
180g dried apricots, roughly chopped
25g desiccated coconut
10g coconut flakes (or substitute for extra desiccated coconut)
30g pumpkin seeds
175g oats
130ml maple syrup or honey
2 tbsp coconut oil
Method
Step 1: Preheat oven to 180°C and line a 20cm x 20cm baking tin with paper. Place dried apricots, coconut, pumpkin seeds and oats in a large bowl and mix to combine.
Step 2: Place maple syrup (or honey) and coconut oil in a small saucepan over medium heat, and heat for 2-3 minutes. Pour over the dry ingredients and mix well.
Step 3: Transfer to lined baking tin and compact mixture with the palm of your hands. Bake for 20-25 minutes, or until golden. Once baked, allow to cool in tin for 20 minutes, then slice.
