Chocolate Celebration Cake

Ingredients
265g plain flour (gluten free, if required)
50g cacao powder
1.5 tsp baking powder
1.5 tsp bicarbonate soda
250g coconut sugar
pinch of salt
2 eggs
250ml dairy-free milk
125ml oil (i.e. vegetable oil or olive oil)
250ml boiling water
3 tbsp dairy-free chocolate spread (i.e. Mayvers or Pana Organic)
8-10 strawberries

Method

1. Preheat oven to 180°C and grease a 22cm cake tin. In a large bowl, sift together flour and cacao powder, then add baking powder and bicarbonate soda. Mix together. Add coconut sugar and salt, then mix again.

2. Add eggs, milk, oil and whisk until combined, then add boiling water and whisk again until a smooth batter forms.

3. Transfer batter to your prepared cake tin and bake for 40-45 minutes, or until a skewer comes out clean. Once cooked, let cake cool completely before removing from tin and decorating.

4. To decorate, gently place chocolate spread all over the top of the cake and slice strawberries into thin slices. To create the flower effect, begin placing the strawberry slices in a circle on the outside of the cake and work your way in, finishing with a small strawberry in the centre.
