Chewy Cookie Bars
My Chewy Choc Chip Cookie Bars are the ultimate movie-night snack. Load them up with your favourite ice cream or enjoy as is with a glass of milk!
Makes 16 | Nut Free Option
Ingredients:
250g (1 cup) nut butter (we used almond butter)
150g (3/4 cup) brown sugar
55g (1/4 cup) maple syrup
1 teaspoon vanilla extract
1 egg
2 tablespoons milk
280g (2 cups + 1/3 cup) plain flour
1/4 tsp bicarbonate powder
1/4 tsp baking powder
Pinch of sea salt
150g chocolate chips
Method:
Step 1: Preheat oven to 160°C and line a square tin with baking paper. In a large bowl, whisk together nut butter, sugar, maple syrup, vanilla, egg and milk.
Step 2: Add the flour, bicarbonate powder, baking powder, salt and chocolate chips, then mix well to combine. You may need to use your hands to ensure everything is well-combined, as the dough is quite stiff.
Step 3: Transfer the dough to your baking tin and press down. Bake for 25-30 minutes, or until firm to touch. Leave to cool for 5 minutes, then remove from the tray and let cool for another 10-15 minutes on a wire rack before slicing.
Note: to make this nut-free, use sunflower seed butter
