Peanut Butter Protein Cookie Dough Bars

Makes: 8-10 | Vegan | Dairy Free

Ingredients

Base

  • 50g vanilla protein powder

  • 50g oat flour

  • 65g maple syrup

  • 1.5 tbsp coconut oil, melted

  • 140g peanut butter

  • 50g dark chocolate chips

Topping

  • 100g dark chocolate

  • 1 tsp coconut oil

  • Pinch of sea salt

Method

Step 1: Line a loaf tin with parchment paper and set aside. Place protein powder, oat flour, maple syrup and coconut oil in a bowl and mix to combine. Then stir in the chocolate chips. Transfer to the lined loaf tin and spread evenly.

Step 2: For the topping, place the dark chocolate and remaining coconut oil in a saucepan over low heat and stir gently. Once melted, pour over the cookie dough mixture. Refrigerate for another 45-55 minutes, then slice and serve.
