Peanut Butter Rocky Road

Ingredients
1 teaspoon coconut oil
160g marshmallow, halved
75g Blue Frog Macadamia Almond Manuka Honey, divided
20g raw pistachio, roughly chopped
15g puffed rice
5g dried flowers to decorate, optional
Method
Step 1: Line and grease a square baking tin, set aside. Place chocolate, everything butter, peanut butter and coconut oil in a saucepan over low heat. Stir gently until melted.
Step 2: In a separate bowl, combine marshmallows, 65g granola, pistachios and puffed rice, then pour over the melted chocolate and mix well.
Step 2: Transfer rocky road to the prepared tin and spread evenly. Sprinkle with remaining 10g granola and dried flowers. Refrigerate for 1 hour, then slice and serve.
