Single Serve Chocolate Pistachio Mug Cake

Serves 1 | Dairy Free Option 

Ingredients  

3 tbsp olive oil  

1 egg 

4 tbsp Pistachio Milk  

1/2 tsp vanilla extract  

3 tbsp maple syrup  

1/4 cup plain flour  

2 tbsp cocoa powder  

1/4 tsp baking powder  

1/4 tsp salt  

30g dark chocolate, roughly chopped 

1 scoop ice cream of choice, dairy free if required  

15g pistachios, roughly chopped  

Method 

Step 1: Place olive oil, egg, milk, vanilla and maple syrup in a mug or bowl of choice; whisk until combined.

Step 2: Add flour, cocoa powder, baking powder and salt; whisk until combined. Add dark chocolate to the centre of the dish.  

Step 3: Microwave for 2 minutes, or until set. Serve with a scoop of ice cream and chopped pistachios.  

Note: the cooking time may vary depending on your microwave. Feel free to cook the mug cake in 20-second increments.
