Chocolate Zabaglione

Serves 4

Ingredients 

75g caster sugar

4 eggs

75ml Marsala wine

30g cocoa powder, plus extra to serve

Almond bread, to serve

Method 

Step 1: Place the caster sugar, eggs, Marsala wine and cocoa powder into the Vitamix Are Disc container and secure the lid. Select the lowest setting. Start the machine, increase to Variable 4 and blend until just combined. 

Step 2: Pour the Zabaglione mixture into a large heatproof bowl. Fill a saucepan halfway with water and bring to a gentle simmer. Set the bowl over the water, ensuring the bottom does not touch the water. 

Step 3: Whisk the mixture, for 8-10 minutes, or until it grows in volume and becomes pale.

Step 4: Fill your preferred serving glass with the Zabaglione and top with extra cocoa powder and almond bread
