Confit Garlic Bread

Serves 4-6, as a side 

Ingredients

1 head of garlic 

200ml Cobram Estate Classic Extra Virgin Olive Oil 

½ tsp sea salt 

1 tbsp parsley, finely chopped 

½ tsp lemon zest 

1 large baguette

15g Parmesan cheese

Method 

Step 1: Peel garlic and place in a small saucepan with Cobram Estate Extra Virgin Olive Oil. Cook over medium-low heat for 25-30 minutes, or until softened and lightly browned. 

Step 2: Use a slotted spoon to remove garlic from oil and transfer to a clean bowl. Add the chopped parsley, lemon zest, salt and 2 tbsp of cooking oil. Mash to combine, until smooth.

Step 2: Slice baguette into long pieces and lightly toast. Spread garlic mixture on top, grate Parmesan, then serve.
