Halloumi, Lentil and Rocket Salad

Serves 2 

Ingredients 

150g haloumi, sliced 

100g rocket (or 2 large handfuls)

1 lebanese cucumber, sliced 

200g cherry tomatoes, halved 

4 spring onions, (green parts), finely chopped 

1x400g tinned lentils, drained and rinsed 

2 cups of cooked brown rice (I used the microwave pouches so I don’t need to do any dishes!)

Small handful fresh dill 

Zest of ½ lemon 

Squeeze of lemon juice 

Pinch of salt flakes 

Olive oil, to drizzle 

Method

  1. Heat a grill pan or fry pan over medium heat. Drizzle with a little oil and cook the halloumi for 5 minutes per side, or until golden. 

  2. Meanwhile, add the rocket, cucumber, cherry tomatoes, spring onions, dill, lentils and brown rice to a large bowl and toss to combine. Add the cooked halloumi, lemon zest, lemon juice, a pinch of salt and a generous drizzle of olive oil. Toss again, then divide between two bowls and serve.
