Chocolate Collagen Mousse

Serves 2

Ingredients

300g silken tofu

100g dark chocolate, melted

1 tbsp cocoa powder

1 tbsp maple syrup

2 tsp Happy Way Unflavoured Marine Collagen

1 tsp vanilla extract

Pinch of salt

Fresh berries of choice, to serve

Method

  1. Combine all ingredients in a blender or food processor and process until smooth.

  2. Divide between 2 glasses and refrigerate for 1 hour to set. Then serve with fresh berries.
